1 can black-eyed peas, drained and roughly mashed 2 shallots, finely chopped 1/2 red bell pepper, finely chopped 1 c. cooked ham, finely chopped 1 c. cornstarch 4 egg whites salt black pepper
Dipping Sauce: 1 can whole cranberry sauce 1 tlb. maple syrup 1 tsp. garlic powder
In a large bowl combine peas, shallot, bell pepper and ham. Mix in cornstarch, egg whites, salt and pepper, to taste.
For dipping sauce: In small saucepan, combine cranberry sauce,syrup and garlic powder. heat till warm. Cover and keep warm.
Heat oil in a dutch oven or deep fryer until it reaches 325 degrees. Working in batches and using 2 tsp, carefully slide small portions of pea mixture into hot oil. The mixture is not very firm so slide into hot oil slowly to keep their shape. Fry about 5 mins. until golden brown and crispy. Drain on paper towels. Serve with dipping sauce.
