2 teasoiibs vegetable oil ½ cup chopped onions 2 small Golden Delicious apples, peeled, chopped in ½ inch pieces 1 (1 lb) can kidney beans, rinsed and drained 1 (1 lb) can stewed tomatoes 2 Tablespoons honey 1 teaspoon curry powder 1 Tablespoon corn starch 1 Tablespoon water
Preheat oven to 350°. Lightly oil a 1½ quart casserole. Heat oil in nonstick skillet over medium heat. Add onions and cook 5 minutes, stirring often. Add apples and continue cooking another 5 minutes, stirring often. Remove skillet from heat, and add remaining ingredients, dissovling the cornstarch in the water, before adding. Mix well, spoon into prepared dish. Cover and bake for 40 minutes.
