Eggplant Stack-ups
Eggplant sliced 1 inch thick
Salt and pepper to taste
Tomato sliced - enough for each eggplant slice
Olive or vegetable oil
Mozzarella cheese - enough for each eggplant slice
Oregano
Foil
Salt and pepper each eggplant slice, roll in flour. Saute in preheated fry pan, browning on both sides. Remove to drain.
Place eggplant on square of aluminum foil. Add tomato slice, top with oregano. Pile mozzarella cheese on top, finish with more oregano. Pull up all four corners of foil, keeping your index finger in the middle, maintaining an open "vent". (It should look like a giant candy kiss.)
Excellent on the grill, or bake in a hot oven at 400 degrees for 25 - 30 minutes. Great left over.
