1/4 cup fresh lemon juice
2 Tbsp. evoo
1 tsp. stone ground mustard
1/4 tsp. salt
1/4 tsp. black pepper
8 cups chopped romaine lettuce
2 cups shredded cooked chicken breast
1-1/2 cups chopped cucumber
1 cup thinly sliced fennel bulb
1/3 cup thinly sliced green onions
1/4 cup chopped mint
1/4 cup chopped fresh flat-leaf parsley
2 (6-inch) pitas, torn into bite sizes pieces
1 (15-oz.) can dark kidney beans, rinsed and drained
1 pint cherry tomatoes, halved

Combine first 5 ingredients in a bowl, stirring with a whisk.

Combine lettuce and remaining ingredients in a large bowl, toss gently.  Drizzle juice mixture over chicken mixture, toss to coat.

Makes 4 servings
My Comments:
This is a Middle Eastern version of pita bread salad and late summer vegetables and with the addition of chicken and beans it makes a good main meal. I made this salad but did not put the cucumbers in it as I did not have any at the time so don't get bent out of shape if it does not look exactly like this salad should. Thanks!!!!!
