Favorite BlackEyed Peas
1 lb. dry blackeyed peas 1 large onion, chopped 6 - 7 slices of meaty bacon, chut in small pieces 2 - 3 garlic cloves, chopped 1 can tomatoes with green chilies, hot or mild salt and pepper to taste
Wash and drain peas. Set aside. Brown bacon and onion until bacon is crisp. Place peas in pot with water to cover. Add bacon and onion. Cook until peas are soft. Add tomatoes and green chilies. Simmer a few minutes to blend.
ENJOY!!! Serve with cornbread;)
