2 large cucumbers, peeled and seeded , sliced 2 large fresh tomatoes, diced 1/4 cup red onions, sliced very thin 2 Tbsp. red wine vinegar 2 Tbsp. evoo 1/2 cup mint leaves, chopped* Salt and pepper
Combine all ingredients in a bowl and mix well. Let set 4 hours for flavors to meld in refrigerator.
* you can add other herbs such as oregano or basil.
