7 medium Roma tomatoes; diced 1 bunch fresh basil; sliced in strips 4 cloves fresh garlic; diced 1 lb whole milk mozzarella cheese; diced salt & pepper to taste light olive oil; enough to cover above mixture 1 lb. penne pasta
In a large serving bowl, put tomatoes, basil, garlic, cheese, salt & pepper, and the olive oil. Let sit on the counter for 20 minutes. Cook the pasta to your taste, drain well. Toss hot pasta into the serving bowl with the tomato mixture. Then enjoy!
