Fresh Seafood Salad






 


 



1 Pound large shrimp, cooked & deveined
1/2 Pound crabmeat, chopped
1/2 Pound bay scallops, poached or sautéed (optional)
1/4 Cup seedless cucumber, chopped
1/4 Cup celery, chopped
1/4 Cup sweet bell pepper, chopped
1/4 Cup mushrooms, sliced
2 leaves green leaf lettuce or curly endive, torn
Vinaigrette salad dressing of your choice
Salt & pepper, to taste


 



In a medium bowl, combine first 8 ingredients. Toss lightly with your favorite vinaigrette salad dressing. Serve chilled.


Serving Ideas:
Optional: To make your own lemon-dill vinaigrette dressing, squeeze juice from 1 lemon. Add 1 clove of minced garlic and 1 tablespoon of chopped fresh dill. Add 6 tablespoons of extra virgin olive oil and whisk gently. Add salt and pepper to taste.
