=== LEMON MAYONNAISE === 6 Tbs mayonnaise 1 tsp olive oil Grated zest of 1 lemon 2 Tbs lemon juice 1 tsp minced garlic 2 Tbs chopped fresh basil leaves === TUNA MARINADE === 2 Tbs extravirgin olive oil 2 Tbs lemon juice 2 tsp finely-minced garlic Salt, to taste Freshly-ground black pepper, to taste 4 yellowfin tuna steaks - (abt 6 oz ea) 8 slices multi-grain bread, lightly toasted 4 slices ripe tomato 4 leaves Boston lettuce or other delicate lettuce
Combine the Lemon Mayonnaise ingredients in a bowl; refrigerate. Combine the marinade ingredients in a bowl. Add the tuna steaks and coat them well. Let rest for up to 30 minutes, turning once. Heat a grill pan over medium heat. Drain the tuna from the marinade and cook for 2 to 3 minutes per side for medium-rare. To assemble sandwiches, spread one side of each slice of toast with Lemon Mayonnaise. Top 4 slices of toast with tuna, a tomato slice and a lettuce leaf. Cover with the remaining slices of toast. Serve immediately.
