Crust: 1 cup finely crushed Fritos
¼ cup melted butter or margarine
Filling: 3 eggs
2 Tablespoons flour
¼ teaspoon baking powder
½ cup cottage cheese
2 slices of bacon, cooked crisp and crumbed
1 tomato, seeded and chopped
2 Tablespoons green diced chiles
¼ cup diced onions
1 cup shredded cheddar cheese
1 teaspoon dried basil
Topping: 2 Tablespoons crushed Fritos
&nb sp; 2 Tablespoons grated Parmesan cheese
Preheat oven to 325°.
To make crust: Combine corn chips with melted butter. Press firmly into bottom of a 9-inch square baking pan. Bake 10 minutes.
Meanwhile, prepare filling: Beat eggs until lemony yellow. Add flour and baking powder. Stir in cottage cheese, bacon, tomatoes, chilies, cheddar cheese, basil and onion.
Remove crust from oven and increase heat to 350°. Pour filling over crust and bake until set, about 30 minutes.
Combine topping ingredients and sprinkle over pie. Bake an additional 5 minutes Serves 4.
