GARLIC PASTA
1Tblsp olive oil 8 cloves garlic, pressed 5 medium tomatoes (6 ounces each), cored, chopped salt and freshly ground pepper to taste 1Tblsp dried basil or 3 tablespoons chopped fresh basil 1 lb angel-hair pasta or linguine, cooked according to package Grated Parmesan or Romano cheese for serving, optional
Heat oil in a large skillet over medium-high heat. Add garlic and cook, stirring often, until fragrant, about 2 minutes, taking care not to let it brown. Add tomatoes, salt, pepper and (if using dried) the basil. Cover and cook over medium heat 10 minutes. Stir occasionally. Remove cover and continue to cook until tomatoes have thickened slightly, 3 to 5 minutes. Add fresh basil, if using. Taste and adjust seasonings. Serve over pasta with cheese sprinkled on top. Yield: 6 servings
