1 package (1 pound) Bratwurst Sausage (5 links)
2 pounds small red potatoes, unpeeled, quartered
1 large green bell pepper, cut into 1 inch pieces
1 large red bell pepper, cut into 1 inch pieces
1 red onion, sliced
1/2 teaspoon salt
1/2 teaspoon caraway seeds
1 cup (4 ounces) shredded Swiss cheese
Coat 13x9 inch baking dish with cooking spray. Slice bratwurst into 1 inch pieces with serrated knife; place in baking dish. Layer potatoes, green pepper, red pepper and onion over bratwursts. Sprinkle
with salt and caraway seeds. Cover with foil. Bake in a 350° oven for 50 to 60 minutes or until
bratwursts are cooked and vegetables are tender, stirring halfway through cooking time. Sprinkle with cheese. Bake, uncovered, 5 minutes more. Makes 6 servings.
