3/4 c. chopped walnuts
3 c. quick-cooking oats
2/3 c. chopped dried fruits (a combination of apricots, apples,
raisins, etc.)
6 T. butter
1/4 c. honey
1/4 c. light brown sugar, packed
3/4 to 1 t. ground cinnamon
3/4 t. vanilla
Combine nuts, oats, and dried fruits in a large bowl. Combine butter, honey, sugar, cinnamon and vanilla in a saucepan and bring to a boil over medium-high heat, stirring. Reduce heat and simmer for 1 min. Stir into oat mixture, combining well. Press firmly with the back of a spoon into a greased foil-lined 11x7" baking pan. Bake at 350 about 15 min or until light brown. Cool, then cut into bars.
