3 lbs red potatoes, cubed 1 cup light mayonaisse (I like the new Hellman's with Olive Oil) 2-3 Tbls red wine vinegar (more if you like it tangy) 3 Tbls dried oregano 1 bunch green onions,sliced
Fresh romaine lettuce Plum Tomatoes Feta Cheese Red Onions Kalamata Olives Your favorite greek dressing
Boil potatoes until fork tender. Drain in a colander, do NOT rinse. Pour into a bowl and let cool. Add mayonaisse, vinegar, oregano and onions and mix together. Cover and put into refrigerator at least two hours or overnight so all the flavors incorporate.
I usually serve this over the green salad and top it with feta cheese and greek dressing. Serves 4-6
