2 cups chopped romaine lettuce leaves, tough outer leaves removed 2 roasted red bell peppers - (see recipe), cut 1/2" pieces 2 medium ripe tomatoes, cut 1/2" pieces 1 hothouse (seedless) cucumber, peeled, quartered lengthwise, then cut into 1/2" pieces 1 cup pitted Kalamata olives, halved 1/3 cup diced (1/4") red onion 2 Tbs chopped fresh mint leaves or flat-leaf parsley Salt, to taste Freshly-ground black pepper, to taste 2 Tbs extra-virgin olive oil 2 Tbs red-wine vinegar 1 cup crumbled fresh feta cheese
Combine lettuce, peppers, tomatoes, cucumber, olives, onion and mint in a salad bowl. Before serving, season with salt and pepper, then toss with oil and vinegar. Lightly toss in the feta cheese.
