Title: Grilled Pepper and avocado sandwich

Two slices of Crusty bread such as sour dough, grill till golden brown.

3 T. Olive Oil
1/4 cup of green peppers, sliced
1/4 cup of red peppers, sliced
1/4 cup of caramelized onions
1/4 cup of sautee'd mushrooms
1 Haas Avocado
1/2 wedge of fresh lime
1/4 cup of Parmesan Cheese
*1/4 cup of Mozzarella Cheese
Kosher salt to taste
Fresh ground black pepper to taste

After veggies have been sauteed, and bread has been grilled, slice avocado and sprinkle with a bit  of lime juice.  Arrange slices on both pieces of bread.  Top with sauteed veggies, and then sprinkle with a bit of salt and pepper to taste then add fresh Parmesan cheese to cover the top of the sandwich.   Broil till cheese begins to meld together.  You can also add Mozzarella if you prefer the taste.  Broil till this browns and bubbles on top of sandwich.
My Comments:
This is a very healthy sandwich and so different. Enjoy:)
