2 tsp chopped fresh sage
= (or 1/2 tspn dried sage)
2 tsp chopped fresh thyme
= (or 1/2 tspn dried thyme)
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1 Tbs Calvados
1 1/2 Tbs finely-grated orange zest
Olive oil cooking spray, as needed

Combine well the turkey, salt, pepper, sage, thyme, ginger, nutmeg, Calvados, and orange zest in a bowl.
Spray a nonstick skillet with cooking spray and sauté a small bit of sausage mixture to test for seasoning. Correct if necessary. Form the remainder into 6 patties, about 1/2 inch thick, and sauté until browned on both sides and cooked through. Serve hot from the pan.
