Title: Hot German Potato Salad

8 slices bacon

4 teaspoons salt

3 tablespoons flour

½ teaspoon ground pepper

1 medium onion chopped


1 teaspoon of dry mustard

2/3 cup water


½ cup parsley


2/3 cup vinegar

2 quarts diced potatoes
2/3 cup sugar

1. Peel and boil potatoes.
2. Fry bacon, remove, drain, and crumble.
3. To ¼ cup bacon fat add flour and onions.
4. Stir in vinegar, water, sugar, salt and spices.
5. Cook till thickened.
6. Add to potatoes, parsley and bacon.
7. Mix carefully. Yields 8 to 10 Servings.
My Comments:
This easy hot potato salad is a family favorite. It doesn’t have a strong vinegar taste. You can double this recipe. At our annual family reunion I am told to bring it or stay home. Note: I don;t know why the spacing is like it is.
