Title: Japanese Mashed Potato Salad

4 large potatoes, peeled, boiled & mashed
1/2 slender cucumber (Japanese kind if possible) thinly sliced
2, 3 T grated carrot
1 apple, washed, cored and chopped peeling on
(or 1 small can of mandarin oranges drained)
2 T. vinegar or lemon juice and 2 T. sugar
4 T. mayonnaise
Mix mayonnaise, vinegar or lemon juice, and sugar.
In another bowl mix potatoes, carrot, cucumber, and apple (if using mandarin oranges wait until last and just mix in so they don't break up)
Then add mayonnaise mix.  Salt to taste.
Chill and top with cherry tomatoes and grated egg yolk when you serve.

My Comments:
I love to use left over mashed potatoes for this recipe but also just want to fix it fresh every once in awhile too. I love not having to cube all those potatoes plus you might think the 'sweet' of the fruit is strange but it is a very pleasant taste. You can do a variation on this by omitting the fruit and putting cooked mixed vegetables in and chopped ham.
