Shred 1 medium Jicama & 1 medium red Potato, 1 small onion. Cut up shrimps in small chunks (or use cocktail shrimps). Mix together. Let stand for 15-20 min. Drain off excess liquid. If needed, add a bit of cornstarch.
Fry in vegetable oil. Turn once.

We're diabetics and need to watch the carb intake. Shredded Jicama is perfect, not just in these little cakes, but as substitute in all sort of dishes, from salads to stir fry.
