Jills'Carrot Cake
Ingredients:
2 cups cake flour 2 teaspoons baking powder 1-1/2 teaspoons baking Soda 1 teaspoons salt 1 teaspoon cinnamon 1 teaspoon of pumpkin pie spice 2 cups sugar 1 cup white 1 cup dark brown sugar or use 3/4 each of Splenda &Brown Splenda 1/2 cup chopped pecans 1 cup butter softened 1/2 cup oil 4 eggs 6 cups grated carrots 1 can (16oz) Crushed Pineapple
Cream Cheese Frosting Ingredients: 1 8 oz. cream cheese 1 stick butter 1 8oz. Cool-Whip 1 teaspoonpure vanilla extract 11/2 cups confectioners sugar
Directions::
Pre-heat oven to 350F. Sift together flour, baking powder, soda, salt and cinnamon,spice in a large bowl. Add sugar, oil,butter and eggs to mixture. Mix Well. Add grated carrots, drained pineapple and chopped pecans. Mix Well. Pour into 3, 9 inch greased pans or 1 greased 9X13 baking pan Bake for 35-45 minutes or until done.
Cool Completely.
Frosting :
Instructions for the Cream Cheese Frosting: Cream first 3 ingredients and beat in sugar,Fold in Cool-Whip mix well. Spread on cool cake.
