Lactose Free Pumpkin Pie
INGREDIENTS:
1 unbaked pie shell
1/2 cup granulated sugar
1/2 tsp salt
NOTE: May use 1 1/2 teaspoons of pumpkin pe spice instead of al spces listed
1 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground cloves
2 eggs
1 15 oz. can pumpkin
1 1/3 cups vanilla soy milk
DIRECTIONS:
Mix dry ingredients in bowl.
In another bowl, beat eggs lightly. Stir in pumpkin and dry ingredient
mixture. Slowly pour in Edensoy and stir until blended.
Pour into pie shell and bake in a preheated 425º oven for 15 minutes.
Reduce temperature to 350º and bake for 40-50 minutes.
