1 c. flour
1.4 c. powdered sugar
2 eggs
2 Tbsp. lemon juice
1/4 tsp. salt
1/2 c. butter, softened
1 c. granulated sugar
2 tsp. grated lemon peel
1/2 tsp baking powder
powdered sugar to sprinkle over top when bars are cool.
Mix flour, butter and 1/4 c. powdered sugar together. Press in ungreased 9x13 baking dish, building edges up 1/4 inch. Bake 10 min. or until light golden brown.
Mix sugar, eggs, lemon peel, lemon juice, baking powder and salt together until light and fluffy, about 3 minutes. Pour over baked layer. Bake at 350 just until no indentation remains when touched in center or about half an hour, until light brown on top.
Let cool. Sprinkle with powdered sugar. Cut into about 1 inch squares when cooled.
