Lentil Curry with Veggies & Rice
Ingredients:

1 ˝ cups green lentils
1 ˝ cups brown rice
6 cups water
2 potatoes, diced
2 carrots, diced
1 zucchini, diced
1 Tbs. olive oil
2 tsp. curry powder
1 garlic clove, minced
1 can diced tomatoes
Directions:
- Bring 6 cups of water to a boil in a large pot; add lentils (after washing well), reduce heat, and simmer for 20 minutes.
- Add rice and cook for another 45 minutes.
- Heat olive oil over medium heat in a large cast iron pan; add potatoes and carrots, stirring occasionally.
- Add curry powder and cook for about 30 minutes; add zucchini and cook 5 minutes more.
- Add garlic to vegetables (sauté prior, if you prefer).
- Add tomatoes to vegetables in cast iron pan (avoid overcooking the tomatoes).
- When rice and lentils are soft, sprinkle extra curry powder, some salt, and extra virgin olive oil (if desired).
- Serve the rice & lentils topped with vegetables, and enjoy while warm.
