Lentil Curry with Veggies & Rice

Ingredients:


1 ˝ cups green lentils
1 ˝ cups brown rice
6 cups water
2 potatoes, diced
2 carrots, diced
1 zucchini, diced
1 Tbs. olive oil
2 tsp. curry powder
1 garlic clove, minced
1 can diced tomatoes


Directions:



  1. Bring 6 cups of water to a boil in a large pot; add lentils (after washing well), reduce heat, and simmer for 20 minutes.
  2. Add rice and cook for another 45 minutes.
  3. Heat olive oil over medium heat in a large cast iron pan; add potatoes and carrots, stirring occasionally.
  4. Add curry powder and cook for about 30 minutes; add zucchini and cook 5 minutes more.
  5. Add garlic to vegetables (sauté prior, if you prefer).
  6. Add tomatoes to vegetables in cast iron pan (avoid overcooking the tomatoes).
  7. When rice and lentils are soft, sprinkle extra curry powder, some salt, and extra virgin olive oil (if desired).
  8. Serve the rice & lentils topped with vegetables, and enjoy while warm.
