MEATLOAF


  • 2.5 -3 lbs. 97% lean ground beef or sirloin
  • 1 egg, beaten.
  • 1/2 white onion, chopped
  • 1/4 c pamresan cheese, grated fine
  • 1/2 c +/- Italian Bread Crumbs
  • 2 T chopped garlic
  • 1 envelope beefy onon soup mix
  • 2 T Worcestershire
  • Garlic Pepper
  • Seasoned Salt

  •  


    FILLING


  • 10 spinach, thawed and drained
  • 1/4 c parmesan
  • 1/2 c shredded swiss cheese, (or any white cheese, Italian blend would be good)
  • 2 T chopped garlic
  • Dash Red Pepper Flakes
  • Hot Sauce or Cayenne (drop or dash, optional)
  • Salt and Pepper

  • DIRECTIONS:
     




    1. Mix meatloaf ingredients by hand
    2. Pat out flat on waxed paper, about 1 inch thick
    3. Mix filling and spread out over meat, leaving a good 2 inch border
    4. Tightly roll beatlof together, pinch ends together, and meshing together if breaks apart anywhere
    5. Transfer to large casserole dish with lid
    6. Cover and microwave 20 minutes, check, and I zapped for another 4 minutes at that point to get the edges a little crusty.

    My Comments:
    Could not find a recipe I liked and wanted to try a cheese/spinach stuffed meatloaf, so, this is what I came up with. I always cook meatloaf in the microwave, it's so much quicker, browns nicely and gets just a tad crusty on the edge if you like.
