Title: Low-Fat Irish Soda Bread

4 cups flour


1 teaspoon baking soda


2 teaspoons baking powder


1 cup granulated sugar


1 teaspoon salt


1 cup golden raisins


3/4 cup skim milk


2 cups fat-free sour cream


3 egg Whites


Cooking Utensils: two greased and floured 8 or 9 inch round cake pans


Preheat/bake oven: 350F. Combine first 5 ingredients. Add raisins to dry ingredients. Mix together milk, sour cream and eggs. Add milk mixture to dry ingredients. Mix until moistened. Pour into prepared pans. Bake; cool in pans for 10 minutes. Remove to wire rack; cool completely. Cut crosswise for thin uniform slices.


Makes 2 loaves.
