Ice Cubes 2-1/2 oz. dark rum 1 oz. light rum 1 oz. orange Curacao or triple sec 1 oz. freshly squeezed lime juice 1/2 oz. simple syrup* 1/4 oz. orgeat syrup* Fresh sprig mint Lime wedge
Fill cocktail shaker halfway with ice. Add rums, Curacao or triple sec, lime juice and orgeat syrup. Shake well.
Fill highball glass 1/2 full with ice cubes. Strain the Mai Tai mixture over the ice. Garnish with mint sprig and lime wedge.
* To make simple syrup by stirring 1/2 cup water into 1 cup sugar in a small saucepan.
Bring mixture to a boil, reduce heat and simmer for 5 minutes, stirring occasionally. Turn off heat and let cool in pan. Store in refrigerator in an air tight container.
* Orgeat is an almond flavored syrup that can be hard to find. It is carried at some gourmet coffee stores.
