Mandarin Spice Muffins
2 c. flour
1/2 c. sugar
1-3/4 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice
1-1/3 c. milk
1/3 c. oil
1 egg
1 (8-oz.) can mandarin orange slices
Crumb Topping:
1/4 c. soft butter
1/3 c. flour
1/2 tsp. cinnamon
1/2 c. sugar
Mix flour, sugar, baking powder, salt, cinnamon, nutmeg and allspice
together. Mix milk, egg and oil together. Gently mix wet ingredients
into dry until just moist. Fold in the mandarin orange slices. Mix
crumb topping ingredients and reserve.
Spray muffin pan with cooking spray and fill cups about 2/3 full and
top with crumb topping. Bake at 350 degrees for about 30 minutes, or
until a toothpick comes out clean.
