Maple Mustard Green Beans
Great for Thanksgiving and Christmas, really great with any turkey meal.

Green beans, ends trimmed

Dijon mustard, coarse grain

Balsamic vinegar

Maple syrup

Olive oil

Green onions, chopped, including tops
Salt and pepper, to taste
Instructions
In a 4 to 5 quart pan, bring water to a boil over high heat. Add beans and cook, uncovered, until tender crisp, about 5 to 8 minutes; drain and pour into serving bowl. Meanwhile mix mustard with vinegar, maple syrup and oil. Pour over hot beans and mix to coat well. Sprinkle with onion. Season with salt and pepper; serve.
