Title: Maple Poached Eggs

½ cup REAL maple syrup
4 eggs
4 thick slices of buttered toast (preferably from homemade bread or a good bakery bread!)

Pour syrup into a skillet and bring to a boil. Gently drop eggs into the pan, one at a time, and turn heat down to a simmer. Cook the eggs, basting with the syrup until the yolks are firm and the whites are opaque. Lift eggs onto toast, and pour remaining syrup over the top and serve.
My Comments:
My Grandmother was born & raised in Vermont, and our family made maple syrup up until about 20 years ago. This is a family recipe.
