Mary Lou's Fried Green Tomatoes

1 small can evaporated milk
Crushed saltine crackers
6-10 small green tomatoes (seeds are smaller)
2-4 eggs, beaten
Hint of sugar
Canola oil

To prepare:  Wash green tomatoes.  On your counter top, lay out paper towels to put tomatoes on.  Slice green tomatoes a little on the thick side (but not too thick) and place them on the paper towels.  Begin warming your oil in skillet.  Take a small amount of sugar and sprinkle over the tomatoes, this helps take some of the bitterness out of the tomatoes.  Once your oil is hot, combine your milk and eggs, mix well.  Then dip your slices of green tomatoes into the milk/egg mixture, then coat with crushed saltines, then place in frying pan.  Once tomatoes are browned, turn and brown the other side.  Place browned tomatoes on a paper towel lined platter and enjoy. 
My Comments:
The canola oil is used because it tolerates higher heat better than vegetable oil and leaves the tomatoes with a crispier texture. The saltines are used rather than flour so that the tomatoes are more crisp and it actually makes leftovers warmed in the microwave, remain crispy so you don't have to throw out any leftovers. Canned milk is used because it is thicker than regular milk, which allows the saltines to cling to the tomatoes better than using flour.

Sounds really good but I use peanut oil it to can tollorate the higher heat and also makes them crisper to. Great post!!!!!! Belle
