Title: Mixed Squash Zucchini Casserole

Take a few small zucchini, and a few yellow summer squash (enough to fit into a quart saucepan...)  Slice them into fairly thin slices. Add half of medium onion.. either white or yellow.  Add about 4 sliced hard boiled eggs, and about 1 cup of cheese, shredded in a food prodcessor. Make up a couple of cups of 7-grain bread crumbs, and take 1/2 of those and stir in  half a stick of melted butter, reserving the other half for the topping later.  Use 1/2 a container of a small sour cream, a cup of mayonnaise, and 2 large eggs, Mix thiese together to make a paste, and toss with all the veggies, and the sliced hard boiled eggs. Put into a lightly PAM sprayed baking pan, a few inches deep. Pat the remaining breadcrumbs over all, as a topping and bake at 350 degrees covered for about 30 minutes. Take off the tinfoil and bake until lightly browned. ENJOY!!!
My Comments:
Also, I add my choice of seasoning. Sea Salt, and fresh ground black pepper, nutmeg if you like it.. and basil. YOUR CHOICE!!!
