Use food processor, grind nuts and seeds. Add veggies and seasonings.
Gather into a mound and shape into a loaf. Top with cranberry relish if desired. Do not cook this; serve it room temp.
My Comments:
This is a great way for vegetraians to get that turkey taste with none of the guilt. OK, it doesn't taste exactly like turkey, but it has that flavor.
The recipe says to serve it with fresh cranberry relish slathered on the top - this is a good idea to start with at a special dinner. However, when a friend mentioned that it tasted like chicken salad, I spread it (Without the relish)on a slice of bread one morning when I was desperate for a quick, nourishing breakfast. Voila! It worked! It tastes better and more like turkey when it stands a day or so.
