Title: Mom's Banana Nut Bread

3 eggs


1 c. sugar


3/4 c. oil


1/2 tsp. vanilla


2 c. mashed bananas


2 c. flour


2 tsp. cinnamon


2 tsp. baking soda


1/2 tsp. salt


1/2 c. chopped nuts


 


Beat eggs till frothy.  Add sugar.  Beat until mixture is thick and lemon color.  Beat in oil and vanilla.  Stir in bananas.  Sift flour, cinnamon, baking soda, and salt, and add to banana mixture.  Fold in chopped nuts.  Pour into 2 greased and floured loaf pans.  Bake at 350 degrees for 40 - 45 minutes.

My Comments:
This was my mom's favorite bread recipe. Cinnamon is added which make it different and special. I beat the eggs till it gets really frothy then add the sugar and beat till it's well incorporated. Some times I like to add crushed pineapple (half banana and half pineapple) and it is really delicious!! Enjoy.
