Mushroom Turnovers

 

For the pastry:


1 pkg. (250 gm. size) cream cheese, softened

1-1/2 cups all purpose flour

1/2 cup butter,
softened

For the filling:


1/2 lb. minced mushrooms

chopped green onion tops to
taste*

3 tbsp. butter

1/4 cup sour cream

1 tsp. salt

1/4 tsp. thyme

2 tbsp. flour

1 egg, beaten

 

 

For pastry, combine ingredients and mix
at medium speed until smooth.  Shape into a ball, wrap and chill for one hour.

 

In skillet, cook minced mushrooms and
onion until tender in butter.  Stir in sour cream, salt, thyme and flour until
mixture is combined.

 

Roll dough 1/8\" thick.  With a 2-34\"
cookie cutter, cut out pastry circles.  Place a tsp. of the mushroom mixture in
the circle, brush edges with beaten egg, fold over and press edges with a fork
to seal.  Prick tops of turnover with a fork and place on a cookie sheet.  Brush
turnovers with egg. 
Bake at 450 degrees for about 12-15
minutes.

 



My Comments:
I got this recipe from a friend (Judy) several years ago and have been making it ever since. I think the original recipe called for chopped onions rather than the green onion tops or chives that I prefer. I always cool the mushroom mixture in the fridge before putting together the turnovers, which makes them much easier to fill and form. At times I make these ahead and freeze, just heating up the appropriate amount in the oven when desired. Whenever I make these, I get rave reviews.
