Title: My Gazpacho

My Gazpacho

4   15 oz cans diced tomatoes or 2 large cans (don't know ounces) diced tomatoes - see note below

2   peeled, seeded and chopped cucumbers

5   chopped celery ribs - remove as many of the strings as you can.  You don't have to get them all, just the bigger ones

1   finely chopped green pepper

1   bunch finely chopped green onions - white part and a little green

2   finely chopped tablespoons garlic

1   tablespoon lime or lemon juice

1   teaspoon white vinegar

3-4 slices of jalapeno from a jar.

2-3 shakes of tobasco sauce

 

You can also add raw grated carrots, raw chopped zucchini, or raw chopped yellow squash - all or whichever you prefer - IF YOU WANT

 

Put all ingredients in a large bowl and let it blend overnight if possible.  Serve with chips, toasted italian or other bread. 

 

NOTE:  If you can get good flavored fresh tomatoes, use those pealed chopped. 

If you add ground cumin , jalapenos and chili powder, it would make this into a salsa.
My Comments:
This stuff is wonderful and healthy. You can eat it with a spoon, but it's good dipped with fritos or other corn chips.
