6 large texas sweet onions, chopped 6 unpared cooking apples, chopped 6 tomatoes, chopped 1 cup white wine vinegar 1 1/2 cup firmly packed light brown sugar 1 tsp salt 1/2 tsp minced fresh ginger 1/2 tsp ground cloves 1 pinch cayenne pepper
In large saucepan, combine onions, apples, tomatoes, vinegar, sugar, salt, ginger, cloves and pepper. Bring to a boil, stirring constantly. Reduce heat and simmer until thickened, about 1 hour, stirring occasionally.
