4 cups all-purpose flour
4 teaspoons baking powder
½ teaspoon baking soda
2 teaspoon salt
1 cup sugar
1 seedless navel orange
Orange juice
1 teaspoon pure orange extract
1 cup melted butter
4 eggs
1 package Nestle chocolate swirled chips
Combine flour, baking powder, baking soda, salt, and white sugar. Set aside.
Zest the orange. Put the zest in a 2 cup measuring cup, then peel the orange, discarding the rind. Cup the orange fine, and add to the zest, in the measuring cup. Pour in just enough orange juice to come up to the one cup level. Add that, the extract, melted butter, eggs and chocolate chips to the flour mixture.
Pour into 24 muffin cups. Sprinkle with a combination of sugar and cinnamon, if desired.
Bake in a preheated 350 degrees F (175 degrees C) oven for 20-25 minutes. Makes 2 dozen.
