Title: Oven-Fried Summer Squash

ingredients

1/3 cup. cornmeal
1/3 cup. parmesan
1 tbsp. all-purpose flour
1/2 cup. buttermilk (or even plain skim milk will work)
4 large. yellow squash, sliced diagonally

Heat oven to 425*. Combine cornmeal, parmesan, flour, salt & pepper. Place buttermilk in medium bowl. Dip squash in buttermilk; allow excess to drip off. Dredge in cornmeal mixture; turn to coat well. Place on baking sheet coated with cooking spray. Coat squash well with cooking spray. Bake 20 minutes, turning once, or until golden brown. 
(Also excellent made with zucchini, eggplant, and green tomatoes)  For leftovers, bake at 350* 10 minutes or until heated through.
