Title: Penne with Garlicky Broccolini

1 (16-oz.) pkg.  penne pasta


6 slices bacon


3/4 lb. broccolini, cut into 1" pieces


12 cloves garlic, crushed


1/3 cup finely grated Parmesan cheese  


Salt and pepper to taste


Bring a large pot of lightly salted water to a boil.  Add the penne and cook until tender, about 8 minutes.  Drain.


Meanwhile, place the bacon in a large skillet.   Turn frequently to cook until browned and crisp.  Drain on paper towels.


Add half the garlic to the bacon grease and cook  for 3 minutes, stirring frequently.  Add the broccolini and continue to cook and stir for 3 to 4 minutes or until the brocollini is tender but still bright green.  Stir in the remaining garlic, salt and pepper.  Add the pasta to the skillet and stir to coat.  Remove from the heat and mix in the Parmesan cheese and crumble the bacon.  toss again and serve.


Makes 8 servings


 

My Comments:
A simple delicious dinner using up the over abundance of broccolini in our garden. And the broccolini can be frozen by parboiling for 5 minutes cooled and placed in serving sized plastic bags. You can use olive oil for the bacon grease and you can also use sausage and veggie sausage for the bacon.
