Title: Pina Colada Granita

1/2 cup rum (such as Malibu)
1/4 cup pineapple juice
1/4 cup fresh lime juice, strained
2 Tbsp. superfine sugar
1 Tbsp. minced fresh mint
1/2 cup boiling water

Combine rum, pineapple juice, lime juice, sugar and mint a small bowl, set aside.

Stir in boiling water into rum mixture until sugar dissolves.

Transfer to a 9" glass baking dish and freeze until solid about 3 hours,

Scrape ice with a fork to infuse the flavors, then scoop into serving dishes or small bowls.

Serve immediately.

Serves 4
My Comments:
We have had this ice and it is very refreshing and so cooling in the hot summertime. It can be doubled.
