Ingredients 1 kg chicken, clean and cut into pieces 2 tablespoon peanut oil or vegetable oil 10 slices ginger (optional), shredded 2 onions, quartered 4 tomatoes, quartered 4 rings of canned pineapples, quartered sprigs of spring onions, or Chinese parsley, cut into 1-inch lengths for garnishing
Sauce ingredients 4 tablespoons tomato ketchup 4 teaspoons pepper sauce 1 tablespoon light soya sauce 1 tablespoon sugar
Method 1. Heat oil in a skillet or wok. Fry shredded ginger till light brown. 2. Add chicken and fry for 5 minutes before adding in the sauce. Mix well. 3. Lower heat, cover and cook for 10 minutes until chicken is cooked. 4. Add in pineapples, onions and cut tomatoes. Stir fry for a minute or so. 5. Garnish and serve.
