(Turkey) Rice Soup
2 cups diced turkey or chicken 1 med. can of diced tomatoes 1 large can of tomato or V8 juice 1 to 2 medium cans of chicken broth 1 small onion, diced 1 to 1 1/2 cups of rice 2 medium cloves of garlic, diced - (optional) herbs and spices to your taste, I usually like to use salt, pepper, basil, dill and a little parsley added right before serving.
1. In a large pan or a 4 qt. or larger slow cooker add all the ingredients except the rice and cook on low for about 30 minutes then add the add , unless you are using instant rice then you don't want to put it in until about the last 30 mins. before you eat.
Tips: You can also use leftover pork roast, or beef roast with beef broth instead of chicken broth. My husband likes to put a few banana peppers in his bowl sometimes or hot sauce sometimes. This soup is so good on a cold day it justs warms you up from the inside out and is so easy to make.

My Comments:
When I was growing up we moved alot and when we lived in Maine (where my dad was born), he got hurt on the job and was out of work for about 6 weeks and my mom was pregnant ( a late in life pregnancy ). Because of that we needed help so we got commodities. My dad wouldn't eat chicken or turkey so we would always have lots of leftover turkey on Thanksgiving and with the commodities we always got a couple cans of shredded meat, (beef, chicken or turkey), along with a bag of rice and a few large cans of tomato and other juice. My mom also made this with the canned meat we got from commodities. That first Thanksgiving we got the commodities my mom made this soup with some of the leftover turkey we had and my dad liked it. He never asked what kind of meat was in it. I always loved this soup from the first time my mom made it and I loved being able to help her make it when it was so cold, snowy and windy out that school was called off. It warms you up inside and tastes so great. You can add different herbs and spices to it to make it different sometimes then others. My cousin liked to put a big dollop of sour cream on his and my dad would put hot sauce. I always put lots of crackers in mine and sometimes shredded cheddar cheese. I have also put shredded parmesan or romano cheese in it to make it different and sometimes cheese flavored crackers in it. This soup is special for me because it was one of the special times I got to help my mom in the kitchen. I loved helping her bake and cook when I was growing up. My husband loves this soup also. The recipe makes a large pot so we always have enough to eat it for 2 to 4 times, I just can't seem to make a small pot of it and it's just my husband & I at home. It does freeze well so I almost always have some in the freezer. It is good by itself or with a sandwich. I hope anyone who tries this likes it as much as I do. Let me know what you think.
