2 tsp. vegetable oil 1/3 cup red onion, thinly sliced 1 tsp. caraway seeds 1-1/2 cups sauerkraut, drained, rinsed 2 Tbsp. sugar 2 Tbsp. apple cider vinegar 2 Tbsp. chopped fresh parsley Pepper to taste 4 bratwurst, partially halved* 4 slices Swiss cheese 4 Corney buns, split 1/2 cup prepared Thousand Island dressing, divided
Preheat the grill to medium-high; preheat the broiler to high with wire rack 6" from the element. Heat oil on a nonstick skillet over medium-high heat. Saute onion and caraway seeds until onion is soft 2-3 minutes, then stir in sauerkraut, sugar and vinegar. Heat until warmed through, then add parsley and pepper. Grill bratwurst on both sides until cooked through, 4-6 minutes. Tuck a slice of cheese inside each bun, place on a baking sheet lined with nonstick foil and broil until cheese melts and bus in toasted 1-2 minutes. To assemble spread 1 Tbsp. dressing in each bun, then top with brats, sauerkraut and more dressing.
