1 jar (16 oz) sauerkraut drained, rinsed
8 oz corned beef; cooked, cut small pieces
1 cup swiss cheese; shredded (~5 oz)
2 Tbs mayonnaise
2 Tbs thousand island salad dressing
2 Tbs butter
1/2 cup pork rinds; crushed


Place the sauerkraut in a 1-1/2 quart glass loaf pan, Spreading it evenly. (Use a microwave-proof casserole if using microwave oven.) Top the sauerkraut with the corned beef, then add a layer of cheese. Combine the mayonnaise and thousand island dressing and spread over the cheese. Melt the butter and drizzle over the breadcrumbs and sprinkle over the casserole. Bake in a preheated 350-degree oven for about 45 minutes until heated through, or microwave on high 12 to 14 minutes. Remove casserole from oven and let sit for 5 minutes before serving.
