&1: (keep white part separate from green part) Using medium-high, heat oil in a large pan. Fry garlic, ginger and white part of onion for 1 minute. Add mushrooms for another minute. Add grated cauliflower (use the shredding blade of the Cuisinart to get the correct consistency for the cauliflower). Stir for about 5 minutes. Add soy sauce and sesame oil (if using). Stir for another few minutes. Add steamed snow peas and green part of onion. Mix everything together. Push entire mixture to one side of the pan. In the empty side add the beaten eggs and scramble until the eggs are just set. Mix the eggs into the 'rice'. Remove from heat. Add already cooked and marinated chicken breast or beef strips to make a whole meal.
