1 medium head cauliflower, cut into 1.5" florets 1 Tbsp. olive oil 1/2 tsp. salt 1/4 tsp. coarsely ground black pepper 2 Tbsp. chopped fresh parsley 2 cloves garlic, crushed
Preheat the oven to 450*F.
In a jelly-roll pan, toss cauliflower, oil, salt and pepper until evenly coated.
Roast until cauliflower is tender about 20 minutes, stirring half way through roasting.
In small cup, combine parsley and garlic. Sprinkle mixture over cauliflower and stir to mix evenly. Roast 3 minutes longer.
Spoon mixture into serving dish.
