Preheat oven to 350* F. Oil a baking dish; set aside.
1-1/2 lbs. Italian Sausage - sweet, mild or hot - your choice
3 bell peppers - 1 ea. yellow, red, green - seeded & cut into 1/2" strips
1 large onion thinly sliced
1-1/2 lbs. baking potatoes, peeled and cut into 1/4" thick slices
Salt and freshly ground pepper to taste
1-3/4 c. fresh peeled or canned tomatoes, chopped
1 c. cubed pecorino or provolone
2 tbsp. fresh chopped rosemary (or 1 tbsp. dried rosemary)
Place the potatoes into an oiled baking dish or pan. Add the peppers and then the sausages. Season well with salt and pepper and drizzle with olive oil.Bake 40 minutes, stirring occasionally. Add the tomatoes, pecorino or provolone and rosemary, stir, then continue cooking for about 10 minutes. Serve hot.
