Title: Roasted Tomato and Spinach Dip

INGREDIENTS:

2 8 oz. Blocks of Cream Cheese
16  oz. Sour Cream
2 Cups Shredded 6 Cheese Italian Blend
1 10 oz. Box of Frozen Chopped Spinach, thawed, drained, and squeezed dry
1 Large Can Diced Fire Roasted Tomatoes, drained
3 Cloves Garlic, minced
Italian Seasoning to taste

METHOD:

In a 2 quart microwave safe dish soften the cream cheese (approximately one minute.  Stir in sour cream and one cup of the shredded cheese.  Stir in tomatoes, spinach, garlic, and italian seasoning.  Cover with remaining cheese blend.  Bake at 350 until cheese is melted and dip is hot.

Serve with crackers, tortilla chips, or my favorite is toasted pita triangles
My Comments:
This dish is incredibly easy to make, and is always popular whenever I bring it to a pot luck or party. I came up with this after trying a similar dip in a restaurant. At first I roasted roma tomatoes to make it, but was in a hurry one night and tried the canned. It was just as good, and alot easier. Enjoy!!
