Title: Roasted Winter Vegetables

2 conts. (Brussels sprouts, halved
1 lb baby patty pan Squash
1 LB. Baby Carrots, Trimmed
8 oz.Shallots quartered
3Tbs. olive oil`
4 Cloves garlic, quartered
1/2 tsp. salt
1/4 tsp. pepper
2Tbs. chopped fresh parsley
Preheat oven to 425 F. In large bowl, toss vegetables with garlic, 1/2 tsp salt.and 1/4 tsp. pepper, Spread in single layer in larger in large roasting pan or jellyroll pan.
Roast, stirring occasionally, until tender, about 25 minutes. Transfer to serving bowl: sprinkle with parsley.
My Comments:
I made this with a beef roast and everyone liked it. I never have cook with shallots before. Now I use them in a lot of recipe
