In large bowl, toss vegetables with garlic, 1/2 tsp salt.and 1/4 tsp. pepper, Spread in single layer in larger in large roasting pan or jellyroll pan. Roast, stirring occasionally, until tender, about 25 minutes. Transfer to serving bowl: sprinkle with parsley.
